    Long ago and far away, a nomad living in a vast Middle East desert decided to go on a far journey. So he saddled up his camel and poured a lot of milk in his saddlebag to drink along the way. It was a very hot day, even by Gobi standards, and the milk curdled after several hours of riding. When he opened up the bag, instead of milk, he found white curds with liquid! Yet another "Aha" moment in history.

    I do not recommend you fry them (although I don't recommend that you fry much of anything so I may be biased).

    And the fresh ones do squeak (from the FAQ):

    Q. I TRIED ONE AND IT SQUEAKED WHEN I BIT IT. DID I HURT IT?

    A. You cannot hurt a Cheese Curd. Fresh curds squeak against your teeth when you bite into them. It's their way of saying "hi." After twelve hours or so, they lose their squeak, even if they're refrigerated (For a couple of days, a couple seconds in a microwave can restore their squeak.).
