    I worked for McDonalds.  When our peak hour sales were down, the brass would insist we ADD labor.

    That is still true so far as I've heard.

      I still decide where to eat lunch based on how long the line is.  (Center City Philly has lots of choices)

      I spent 20+ years in retail/fast food.   Some at entry level, some at management level.  The entry level years made me have more understanding as a manager.  

      Your stuff is very real and your concern for your coworkers is amazing (I had a friend who used to have a list of "meals for less than $1."  Then the cheapass landlord of her affordable apartment used space heaters to thaw out her frozen pipes, and burned the place down.  Once she found her cats, alive, and the manuscript for her book in the "safe box", she was okay.  Then she threw a "burning down the house" party.  We brought our extra stuff for her.  She was exactly one of your Peops.)
