    We need many more lessons on living simply and frugally, and this is a great contribution!

    I have canned lots of things, including salmon and wild mushrooms, in my pressure canner, but have lately taken to freezing foods.  But during the floods, I was very worried about losing all the foods I'd just frozen when we lost power! Thankfully, a neighbor came up with an extra (nice, quiet Honda) generator that we shared with yet another neighbor, saving the harvest. We lucked out this time, but I may go back to canning next year.

      that knocked our power out for a few weeks. In order to save part of the meat I had in my freezer, I pulled out my pressure canner and canned it. We still had running water and gas, so I was still able to use my stove. Better to can it than see it spoil and go to waste. The heat from the canner also helped keep the house warm.

      I used to can a lot.  This diary has me thinking... hum?  Where are those recipes?

      I used to can peaches just after the harvest and would buy a bushel of ripe peaches from a farmer, then take it home and sort it out.  The perfect peaches would go in one pile and would lose their skins and be cut nicely to be put in a quart jar.  the imperfect ones, would be cleaned and cut up, thrown into the Cuisinart and processed into a liquid to which I added some honey.  I used that liquid as the canning liquid for the peaches.
      Oh My god....it was super.... talk about doubling down on the peachy goodness.  That way I got to control the sugar content as well.  It was a tradition at Xmas to open one of the quarts and have the golden peaches smelling of summer while the snow fell outside.  Yum
