    Bison are also so much better for the American landscape and environment than cattle. The shape of the hoof is different as is the way that they graze. Because they evolved as part of the eco-system, there is a symbiotic relationship between the American prairie and the bison. A cow hoof flattens, crushes and compacts. A bison hoof cuts into the ground, just like a lawn aerator. This action also sows new seeds. The differences in grazing result in a greater diversity of plants in areas grazed by bison as opposed to cattle. The research on all this is fascinating and really supports the goal of returning bison to the plains and limiting or even eliminating cattle grazing.

    I know which side I am on: the one that does the math.

      ...don't have to fly food in to bison the way you do cattle. They are built to take it.

        Disclaimer: this is based on stuff I read a couple years ago, so it may not be current.

        Apparently there's a Dept of Agriculture (Interior?) sponsored bison marketing cartel that's mandatory for bison ranchers. It's good & bad.

        Good: no antibiotics (except for legit medical treatment) or growth hormones for bison.

        Bad: no price competition. Thus bison remains significantly more expensive than beef.

        Kroger in the Atlanta area used to carry bison at reasonable prices, but the wholesaler went out of business. They now carry another brand, but it's pricier. Also pricier at the other major Atlanta area supermarket, Publix.

        I make a mean chili, and love to make it with bison.
