    roaming the range (when allowed to do so) and thus are much fitter and leaner and with more muscle mass than domesticated cattle who do little but stand around all day but eat and crap (because they're bred and conditioned to do so).

    It's not different with people. Athletes have far less fat and far more muscle than out of shape couch potatoes and have the BMI to show for it.

      A perfect comparison is the difference between grass fed beef (athletes on a good diet) and grain fed beef (high bad carbs and no exercise.)

      Here's a photo I took of the difference. This shows up in humans also. Diet and exercise are key components of muscle/fat ratio. Which do you want to be and which do you want to eat?

      Bison are closer to grass fed beef in muscle make up.

        As it gives more flavor that many people prefer. Myself, I generally go for leaner cuts of meat and cut off most of the fat if it's not too marbled (although I LOVE brisket). But it's indisputible that what an animal eats and how much and what kind of exercize it gets and how it lives affects what kind of meat it yields.

      The difference does not come from the species (which are not all that different), but from how they are kept. Comparing a grass-fed, free-roaming bison to a stable-only cow is not fair. A free-roaming, grass-only fed cow might be much closer to the bison.

      That aside, even from Navajo's figures above (which do not allow to compare an overall beef figure to the overall bison), bison is not at a third of the calories, even if comparing to the higher beef figure.

      Freedom is not just a word. 'Freedom' is a noun.
