    Fish cheek is the best part of fresh fish and quite easy to distinguish because of it's shape and texture.

    Generally, the guest of honor or eldest gets the fish head at a Chinese dinner.

    Some dishes use fish cheeks, usually braised with stock, ginger and a delicate green vegetable, and sure it's expensive. Usually spotted grouper is used, which is a expensive fish, and it only has 2 cheeks, right?

    Fish maw is the air bladder that keep fish afloat and kind of a membrane. In Chinese cooking, it starts as an air dried ingredient usually cooked in soup. There is also deep fried fish maw that is crispy.

    Some fish maw is expensive but most is not (bought in a Chinese market).

    Generally it's considered a heath food good for skin and internal organs because it's mostly collagen (hence the flexibility).

    What about my Daughter's future?
