    Don't count on this being too helpful, it's mostly stream of consciousness.  My first thought was that I hike in Acadia Natl Park one week every year.  You can choose any level of difficulty.  The place is perfect for heart/lung conditioning.  Then as the degree of difficulty increases, you pick up all sorts of skills.

    I think it would be very helpful to buy trail books for several of the mountains you want to climb initially.  The information in these guides is usually very accurate and extremely helpful in choosing trails to suit your immediate needs in terms of difficulty.

    You might want to contact the park services (state, Feds.) to find out if there are hiking clubs doing pretty much what you want to do.
