    Take a chicken.  Remove giblets and set aside. (When I have enough chicken livers, my husband gets fried livers, which he adores. Or you could make pate.)

    Put a lemon  into the cavity, cut into quarters. Put the chicken into a roasting pan. Pour a cup of white wine or apple juice around the chicken. Put lid on. Roast until leg is loose and juices run clear.

    Remove chicken from pan. Strain pan juices and reserve. Remove breasts from chicken. Make desired side dishes (ours would be mashed potatoes with chicken gravy, using that pan juice, and green beans.Leftovers of green beans can be eaten another time, and mashed potatoes turn either into potato soup or potato cakes.)

    After supper, remove the legs from the chicken and the wings. Cut off the wing tips and reserve.  Wrap chicken legs and wings up for lunch tomorrow.  Pick over the carcass and remove every scrap of meat. Reserve meat scraps.  Put the picked carcass, the neck, the wing tips, and any skin that came loose into a large crockpot. Add two stalks of celery, two carrots slightly cut up, an onion quartered, and two cloves of garlic. Add water to cover, and cook overnight.

    The next day, strain the broth into your large pot, and add water to bring it up to 1 gallon.  Bring to a boil. Discard the carcass, but reserve the vegetables and puree. Make a dough of one egg and one cup flour, roll out 1/8 inch thin. Cut 1 inch squares or strips. Drop each individually into the boiling broth. They will rise to the top when cooked. Remove with slotted spoon to serving dish. When all your dumplings are cooked, mix with 1 cup of the reserved chicken meat and a ladle of broth. This will make about six to eight bowls. Those leftover green beans go nicely with this.  

    The broth is not used up. Add 2 cups of barley to it, a can of mushrooms, the vegetable puree, a little more garlic if you like garlic, a few cut up vegetables you like, and any odds and ends of meat in the fridge. The chicken bits can go in, as can a bit of sausage if you have it. Add water as needed to make either soup or grain-in-sauce-with-meat-and-veg, depending on your preference. This will give you a large pot of barley stuff that makes about eight to ten bowls. And I like it well enough to eat it every day for a week.

    When you come to find how essential the comfort of a well-kept home is to the bodily strength and good conditions, to a sound mind and spirit, and useful days, you will reverence the good housekeeper as I do above artist or poet, beauty or genius.

      Chicken and Dumplins is just the best, most comforting food in the world!

      I currently don't have a kitchen, just a coffee pot, but was thinking I could fake some chicken and dumplings by cutting up some flour tortillas and putting them in some chicken stock.

        I have managed quite well when we lost our stove by having an electric roaster and a crockpot and an electric skillet. Between all that I could do just about anything I needed to to make "real food".

          That would definitely make it easier.  If "real food" isn't available, I usually won't eat.  I'm a very homecookin' kind of person.

          Very interesting sig line- I tend to agree that it is the cornerstone of civilization.
