    We just finished a fresh cherry pie from our own cherries. Tonight I'm doing my new favorite. Slice three onions for 2 people. Sauté in olive oil with a little salt, cover and let sweat, then cook slowly for about a half hour until carmelized, soft and golden brown. Meanwhile cook a half a pound of spaghetti or linguini. When the pasta and onions are done, save a bit of pasta water and drain the pasta. Place in a bowl and toss with the onions and some good Parmesan or Romano cheese. Add a bit of pasta water if it seems dry. We serve it with a salad and sometimes some grilled Italian sausages.
