  •  Cool! I've always found the idea of smoking (8+ / 0-)

meats daunting. Perhaps it is approachable...

Tonight I'm making a dish from Saveur and one from The Chez Panisse Menu Cookbook - there's a close approximation here.

Making my own pasta (1 cup flour, 1 egg, mix, knead, add as little water as you possibly can, if any) rolling it to sheets, and then hand-cutting "pappardelle" - though what that means to me is just "really wide noodles," which may not fit the Italians' exact measurement for them.  The topping is pancetta and radicchio.

The salad from Chez P. is goat cheese set for awhile (not long enough) in olive oil and thyme, coated with bread crumbs and dried thyme, and baked a few minutes till it's warmed through (maybe 6?), and served over baby lettuces tossed with a vinaigrette.

    •  I thought that was the definition (6+ / 0-)

"pappardelle" == "really wide noodles". OK, maybe I don't know any Italian except the musical terms.

People keep reminding me of favorite recipes I haven't eaten lately. Another is a chicken pasta sauce that's supposed to go with pappardelle.

Our Italian teacher told us the Italians have something like 187 different kinds of pasta. I figure at that rate they must be differentiated by the millimeter!

Would love to hear your chicken pasta recipe sometime!
