    was dinner last night. It's kind of a glorified shepherd's pie. It's VERY good and very filling.

    Mashed potatoes
    hamburger
    1 large tomato
    1/2 an onion
     a can of corn (or equivalent frozen or fresh)
    toast or croutons
    cheese

    The meat and vegetables are cooked together (while the potatoes are boiling to mash), seasoned as you prefer, we often use either Italian dressing or some olive oil, garlic infused vinegar and spices.
    You toast about 6 slices of bread and dice them.

    Layer the mashed potatoes, vegetable mixture, toast (diced), and cheese (usually 2 layers of each unless i'm making a double pot for a pot luck).

    Bake at 350 for about 20 minutes.

    A good thing with this is you can prepare it ahead of time and just pop it into the oven if you're entertaining or working late. It's a really good cold or rainy day dish.

    When we make it, we make my son a hamburger and hand cut fries, because he won't eat things mixed together like that (autism sensory thing).

      instead of just corn, but otherwise, this sounds great.

        The original recipe called for 3 cans of corn and no potatoes, which just seemed.. odd to me. So I changed things around. Last night though we didn't have any frozen mixed vegetables, we did have a can of corn. You could use pretty much whatever you had in the house for this, which is part of what makes it so useful.

        I've made smaller batches that fit in a loaf pan for two people, and I've made huge batches that use 5 lbs of potatoes and fill our roaster pan to near overflowing for pot lucks. Finding the right amounts to suit your household is the most tricky part. But on the plus side it reheats VERY well for leftovers!
        We had about half of what was in Caedy's pick left over, just got done having some for lunch :).
