    The "Hobart" was the machine that mixed the dough.  The dough recipe started with a 50 pound bag of flour, 24 pounds of water, yeast and spices measured in drink-cup sizes, etc.

    Although I suspect in most kitchens, "the Hobart" is the biggest, flashiest machine there.  They make a lot of very cool big-iron kitchen stuff.

    We did dishes by hand, with the soapy-warm-water sink, followed by a rinse-sink, followed by the really-hot-water-sterilize sink.
