    grains that are wheat cultivars and hybrids. And a diet composed almost entirely of wheat is not healthy. One should eat a variety of foods. Increased emphasis on gluten grains will increase the incidence of celiac and gluten intolerance.

      don't like the way it tastes. Period. So we feed it to animals. Some people think it tastes ok. You can find it in health food stores, but the mass market has said "no".

        only for yourself. Many people do decide whether they want to be celiac or not, and often their guess is dead wrong.  Yes, a person can die from this, or from the many symptoms manifested.

        Like most Americans, I always liked grains and products made from them. But I and many other people, despite what you might want to claim, am much the worse for it. Gluten intolerance and celiac are increasing in this country as higher-gluten hybrids become available and people are urged to eat a lower-quality diet made up of more and more baked goods and pasta all the time.

        It's easy to want it to be a simple issue. It's not.

          created to help celiacs or gluten sensitive individuals. It was made to give the world a better wheat compliment, one that did not need much fertilization and could handle harsher soil conditions. We wheat eaters didn't like the way it tasted. It's that simple.
