    I have a smoker that I do pork butt on (8-12 hours at ~250 degrees with a cool, smoky fire with applewood or cherry wood) which also can double as a traditional grill (fast cooking over coals)...   But I'm missing the convection part.  

    I may have to invest in one of these....  I'd love to be able to sear my Delmonico-cut ribeyes in a hot, hot oven...  and making pizza with your recipe sounds awesome.

      Got mine at Menard's for $450 about 3 years ago.  I use it 3-5 times a week all year round.  Even in the dead of winter, if I want a pizza, I'm doing it that way.  Same for steaks, burgers, etc.   It will make the best beer-can roasted chicken you've ever tasted.  And so juicy.

      Just throw some of your favorite wood chips into the charcoal.  I like cherry, especially with poultry.  But apple is really nice too.  For god's sake stay away from mesquite!

        My favorite is pulled pork, and mesquite is just too strong for it.  Mesquite is OK with beef brisket, but not much else in my opinion.   The fruit woods give a nice flavor...  so do Pecan and Maple.  

        Is this thing aluminum?  Ceramic coated iron?  My current smoker is coated steel, but it's old and is beginning to rust.  It's also a pain to move in and out  of the garage every time I use it.  

        I will need to get a new setup soon.  My dad has one that he had custom fabricated out of Stainless steel....  They basically took a 36" diameter stainless steel pipe and turned it into a smoker/grill.  He's had that for almost as long as I've been alive, and it cost him a pretty penny...  I doubt I can afford anything like that, but this one you have seems interesting.

          VERY tough exterior.  Can stay outside in the whether all year long.
