    stock and broth for using later.  I can buy chicken and duck carcasses at the Asian markets, as well as lovely marrow bones, chicken feet, and neck bones from oxen, beeves, and pigs.

    I don't generally mix stocks, though.  If I start with chicken, I stay with chicken, or beef, or pig, or whatever animal I made the stock from.

    I've never used store-bought stock.
