    why grade B?

      It's actually a colorant scale.  Grade A is the lighter golds, and what is preferred for pancakes because it is clear and pretty.  Grade B is a lot darker; the flavor of it is more robust and molasses-like, just like light brown sugar has a less intense flavor than dark brown sugar.  Wiki has a picture:

      This means I can get away with 1 tablespoon of syrup on my pancakes, instead of two, and still get a better pancake experience.  Grade B is also better for baking and cooking, when it calls for maple syrup.
