    Preheat oven to 375.  Cut the tiptop off a whole head of garlic, exposing all cloves, coat head with olive oil, wrap in foil and place in oven to roast for 30 mins.  Remove and allow to cool.

    Peel and quarter 8 large russet potatoes, put them in a saucepan and add water to cover amply, boil until fork tender (20-30 mins.), and drain in a colander.

    While potatoes are cooking, melt 4 tbsp unsalted butter in 1/2 cup of milk over low heat.

    Return drained potatoes to saucepan over low heat, tossing to evaporate any excess moisture.  Add butter/milk mixture and mash the potatoes with a sturdy whisk.  Crumble in 4 oz unaged chevre cheese.  Squeeze the roasted garlic from its skin and add to potatoes.  Add by increments 1 tbsp chopped fresh rosemary leaves, 2 tsp (or less) salt, 1 tsp ground black pepper.  Mash to combine.  Tweak to taste.  Serve immediately.

    Should work with your menu nicely, and it's easier than it sounds.

      and it's right up our alley.  We love garlic mashed potatoes.

      I've never tried that cheese.  I wonder if our store will have it.  I bet that KBO could get some at Whole Foods though.

      It's rare for me to cook a filet mignon dinner. My oldest son's favorite dinner is steak and the others like it too.  I can't afford it.  But since the steaks were donated, I want to make a really nice dinner out of it, and perhaps use that dining room and all of that Lenox china that I have.  I've got the full set of Lenox china, the classic "Eternal" pattern that is just bone china with gold edges.  I have some of their Christmas holly pattern to complement it, silver plated flatware, crystal goblets and all kinds of accessories.  Beautiful table cloths, etc, and it rarely gets used.  I think it's time to do a clear up in there, set the table and give my kids a chance to practice some good table manners, lol.
