    assumption correct?

    None of the final letters can be a consonant unless they're silent (like the 't' in sorbet)?

        pretty much any consonant can be silent. ;D

          For instance, the B in limb is silent -- but if the word limb appeared in the text I would need to convert it to something such as limbu.

          The rule is that the word must end either in a vowel or a vowel sound; if it doesn't meet one of those two conditions, then I have to add on either A, E, I, O, U or Y to the end.

          So date gets left alone (ends in a vowel) and ballet gets left alone (ends in a vowel sound). But ballot gets altered.

          Similarly the word must begin either with a consonant or a consonant sound; if it doesn't meet one of those two conditions, then I have to add on either B, C, D, F, G, H, J, K, L, M, N, P, Q, R, S, T, V, W, X or Z at the beginning.

          So date gets left alone (starts with a consonant) and unionize gets left alone (starts with a consonant sound). But onion gets altered.
