potatoes and pumpkin on an iron?

Let me see if I can figure this one out.

You make up the batter (egg, flour, pumpkin, baking soda, salt, milk) and you drop a fourth cup of batter on an aluminum foil covered iron on high heat?  Turn when it bubbles?

        •  exactly. I might experiment with smaller (0+ / 0-)

measures at first -- think silver dollar pancakes. If you 're into nonstick, rub the foil with a stick of butter.

            tuna-can upside-down cake. :)

(1 tuna can, empty, well washed, delabeled, rubbed inside with a little oil or butter.
1 next-size larger can (e.g. pineapple, similarly treated)
1/4 to 1/3 cup cake batter, made according to box directions -- I like Jiffy brand 'cause they don't make you hunt down humpty-leven things to put in so it's cake instead of biscuits -- but sub half the liquid for pineapple juice.
            1 slice pineapple.
1 tbsp brown sugar, if you can get it.

Grease the tuna can. Sprinkle in half the brown sugar. Lay down the pineapple slice. Sprinkle in half the remaining brown sugar. Pour in the batter. Sprinkle on the remaining sugar. Set this on the foil-covered iron, and put the (inverted, bottom-closed) next larger can over the top to form an oven. It takes 20-25 minutes to bake one of these, serves 1. Don't even peek under the bigger can for the first 18-20 minutes or it'll fall.

But it's pretty entertaining to watch the faces of Webelos Scouts when you pull one of these off during the meetings.
