    is one that I have trouble taking chances with. It's not one of my favorite flavors and it can be overpowering. But there are many dishes that I enjoy that wouldn't be any good without it.

    A couple of years I grew it in my garden and I was just given some seed so it looks like I'll have a crop of it this year hopefully. I tend to get more use out of the seeds of the plant (leaves=cilantro, seeds=coriander) because they are so easy to dry and store. Cilantro loses almost all of its flavor when it's dried. I may try freezing some this year if I get a good harvest.

      Tasting Cilantro is a "dominant, Mendelian gene." There actually aren't many genes that follow ole Father Gregor's rules, you know. About 1/4 of the folks you serve it to will think it tastes like soap. So yes, use it lightly--especially for company.
