  •  During the first years of my marriage, (4+ / 0-)

my husband was an E 5 and we were strapped for money most of the time.  The thing about those beans is that you can soak them overnight, which cuts down on prep time a lot. It DOES take planning. I was in school again (an A.S. in paralegal to go with the two master's degrees in fields which don't hire military wives because of the constant moves) and very busy, but I WAS capable of pre-soaking the beans.  But you aer right about the cooking time--they take several hours to cook, as does my spaghetti sauce from scratch--the up side is that you get several meals from one long amount of cooking and only have to reheat the laftovers. I always cooked in bulk.

Actually some of the dishes my husband loves best are from that time: re beans and rice  with Italian sausage (back then we would forego the sausage), pea soup (now I can afford to buy a slice of ham, instead of using  salt pork for flavor, plus sherry), lentil soup (again I can now afford the sausage).

I'll be making spaghetti sauce with meat (we  never got int he habit of meatballs) from scratch next week.  We'll get at least 4 meals from it. Of course it's jsut the two of us. I also plan to make and freeze pans of mac and cheese (home made, not the nast Kraft's kind, yuch) and rigatoni with some marinara sauce and cheese.

The last time we mixed religion and politics people got burned at the stake.
