    First of all, there is the issue that the people in meat-eating group also had a whole slew of unhealthy habits, like smoking , eating junk food, and not exercising. The authors admitted this, but they claim that meat has a 'special' danger. Yeah, right.  This also leads to the complication that people who don't eat a lot of processed meat probably do a lot of other healthy things, like exercise and not eat a lot of crap. So is it the avoiding meat that makes them healthy or not living on Cheesy Doodles and zoning out in front of the TV that makes them healthy?

    Second, the danger from sodium nitrite is highly over rated. Lots of food contain sodium nitrate, like spinach, carrots, and celery,  and when we digest those foods we convert that into sodium nitrite. If you are encouraging people to eat spinach and carrots, you are basically encouraging them to ingest sodium nitrites. Haven't seen any warning labels about that.

    The trick is quality. Find a good (I mean GOOD) source of quality meats, including sausages. I have a market locally that has a meats from Amish farmers. Do some research and find a quality source near you.
