        I have developed a technique for yeast bread that involves next to no kneading, so no standing, pushing, etc.

        sourdough sponge takes about 3 minutes to put together, then it sits overnight (8-24 hrs), then add ingredients and let it sit through another 2-3 hours of rising, turning the dough with about 4 motions of a scraper, about 4 times. VERY little handwork, and the rises are 45 min or longer, so not jumping up every 10 minutes! if this is something you might be interested in, let me know and I'll fill in the details.

          like one from the "quick-fix" side...

          what I was thinking of was your comment about how hard the necessary cooking can be to actually, physically do. so what popped into my head was this thing I've developed to go around my legacy carpal wrists, how I can make non-chemical bread for my own guys with dietary issues. I was thinking that my method is very time-forgiving and the SHORT rises are 45 minutes long, so that's not having to climb up to standing every 10 or 15 minutes, at least.

            give me a bread machine some time ago.

            I actually enjoy flour tortillas for the texture more than bread, sourdough and french breads excepted.

              so I don't have to keep writing it out, 8-); it is for a sorta'-sourdough-ciabatta.

              I have kludged the recipe together from several sources and it makes a nice moist, chewy loaf that hangs together pretty well, freezes well. I mostly use it to make hamburger buns for my jr. carnivore, and small loaves for toast (crunchy/chewy is MY "mouth-feel" thing).

              I use the 1847 Oregon Trail sourdough. free online for a SASE!, lives happily in the refrigerator, not terribly sour result but very, very reliable and it MUST be close to immortal because I haven't managed to kill it in 2-3 years!

              when I do finally get it written up, I'll be sure to post it here somewhere, 8-), probably with the Practical Survivalism tag.
