    Tonight's dinner is going to be Portobello mushrooms stuffed with artichoke, spinach, sun dried tomatoes, and provolone cheese.

    The only trouble with retirement is...I never get a day off!

      This sounds really good. If it turns out to taste as good as it reads, please post the recipe.

      My artichoke plants are looking quite robust, so I'm hoping for another good crop this year. Using them to stuff portobellos is quite appealing!

        The recipe calls for Italian sausage, but I alternate between sausage and artichoke bottoms. Yes, I said artichoke bottoms.

        The artichoke bottoms cost more--I pay $4.25 for a 16 oz can--but they are so much better than artichoke hearts.

        I would much prefer paying a bit more for the artichoke bottoms. You get what you pay for. Artichoke hearts aren't really the hearts at all. They are just immature artichokes with the outer leaves stripped off whereas the artichoke bottoms are the bottoms from mature artichokes.

        The artichoke bottoms that fill a 16 oz can of Reese Artichoke Bottoms doesn't contain any of the fibrous leaves that you find in a can of Artichoke Hearts.

        Yes, it costs a bit more, but you get real value for your money. A 16 oz can probably contains 5 artichoke bottoms that are nearly as wide as the can. That's a lot of artichoke.

        Assuming I do three stuffed mushrooms I'll be using no more than two artichoke bottoms at most and the rest are left for other recipes. And, if you leave the remaining artichokes in the brine they will last for well over a week and you can use them in other recipes.

        BTW, there are a huge number of recipes that call for artichoke hearts so the leftover artichoke bottoms don't need to go to waste.

      Too many in this country feel the Constitution should include the 2nd Amendment. And nothing else.
