    There are some companies that are specializing in the heat. They're not mainstream, you won't find them at the grocery story, but if you like it hot you can find some artisanal salsas that will blow the lid off for you.

      super to pick up some peppers, it's a little discouraging.  I've just about given up on jalapenos altogether, and mostly use serranos now.  But they, too, are being dumbed down.  

      It's gotten to the point where you almost have to use a mix of jalapenos, serranos and thai reds to get some heat and flavor.

      That's not hard if you live in Portland, or any other good sized city...but I'm sure there are towns where the local super in the hinterlands may have only one of those chiles in the produce section.

      I've seen their ghost pepper salsa at Shaw's and Hannaford's, which are nothing special grocery stores. It's too much capsaicin and smoky flavor for my tastes. But I always have their habanero salsa in stock (except when I make my own).

      but every supermarket I've frequented has a secret aisle of what I'll call Weird Ethnic Shit :-) where 'ethnic' means "sauces and other foods not made by megacorps." This is where you'll find real hot sauces and fish sauce and probably panko crumbs and 'crazy' :-) noodles made out of rice or buckwheat, mince pie filling, rice in really big bags, etc.
