    things, more a plan of attack, but I think you can get something edible if you do this...

    2 fish per person, one if it's big.
    Fresh dill to suit amount of fish.
    Enough fresh shiitakes (if dry is what you can get, rehydrate with the sherry)
    Sherry enough to come halfway up the mushrooms
    Garlic powder
    Black pepper
    Sliced almonds
    Melted butter.
    Scale this to how many fish and people.

    Get a baking dish large enough to hold the fish mostly flat. Put in enough mushrooms to cover the bottom. Sprinkle over lightly with garlic powder.

    Behead, scale, and gut fish. Trim body fins off. Rinse out cavity and loosely stuff with dill weed. Lay on mushrooms. Pour in enough sherry to come about halfway up the mushrooms. Brush fish with melted butter. Sprinkle with garlic powder lightly, then grind black pepper over lightly, then strew to your taste with almonds. Bake uncovered at 325, basting halfway through with the butter, for 25 minutes or until fish flakes.
