    Pasta with sausage and broccoli rabe is well known, but one day when the b-rabe at the supermarket looked a bit too wilted, I used spinach instead. Sautee the spinach leaves in a bit of butter until they are well wilted, remove from heat and chop after they've cooled a bit, and proceed to mix with the other ingredients. An earthy, filling dish; serve it with a gutsy red wine like an Aglianico or Grenache-based wine from the South of France or Spain.
