    lots of things.  Your description of genetic modification over the centuries isn't harmful, IMO.  I think that because the best offspring of a plant that survived x condition in the region would mean that its offspring would do well.  'Traditional' genetic modification has been more of a 'natural' 'selection' than what it has become today in the labs.  Now they're splicing the genes of animals like jellyfish with wheat (I don't know specifically what species of what are being cross bread, other than that are doing so), something that doesn't happen an awful lot in nature (horse and donkey = mule as one example).
