    Make some brown rice - 1 cup rice to two cups water...set aside.

    Cut the zukes in half, lengthwise and scoop out the innards leaving enough shell to be still firm and intact.

    Chop up the innards into little bits and sauté in butter and/or olive oil with mushrooms, chopped onion, lots of crushed garlic, a handful of sunflower seeds or pine nuts or both. When the onions are soft, add dried basil, thyme and rosemary (or oregano if you don't like rosemary).

    Beat a couple of eggs, mix in 1 ½ cups ricotta cheese or cottage cheese, a couple of shakes of Tabasco or habanero sauce, some salt to taste. Add the rice and the sautéed veggie mix.

    Oil a baking dish and put the boats in it. Fill the boats with mixture and top with cheese...mozzarella, parmesan, romano..cheddar...whatever kind you like best, or a mix. Sprinkle paprika on top of the cheese.

    Bake at 350 degrees for 35-40 minutes...Munch and enjoy!
