    upset your tummy. there's no particular reason i know that they should. it's not like they were discovered by the processed food industry -- some of them come from plants that people have been eating for eons.

    i still buy breyers for my kids, just for the simplicity of the ingredients. it annoys them, though, because i can only afford it when it's on sale, so we don't get as much ice cream around here as they would like.

    As to that last paragraph, basically, the faster you freeze it, the shorter the crystals, and thus the smoother and creamier the ice cream. I was told the actual process for dippin dots is a trade secret, but nobody has much doubt about the basic trick, which is to drip the mix into a liquid nitrogen bath. Since they freeze almost instantly, they contain very small crystals -- but they have to be kept and transported at lower temperatures than "normal" ice creams. Unlike normal ice creams, they don't have any significant amount of air whipped into them, because they don't need it.

    To put the torture behind us is, inevitably, to put it in front of us.
