    a riff on one of the recipes in the Sundays at Moosewood cookbook.

    1 block tofu, crumbled
    2 zucchini, grated
    3 cloves of garlic, minced
    1 small onion, diced
    ~1/4 cup breadcrumbs
    ~1/2 cup walnuts, finely chopped
    whatever spices and herbs float your boat

    The trick is to cut, press and then freeze the tofu. Once you thaw the tofu, you can wring the excess water out and run it across a box grater or just crumble it with your hands.

    Cook the onions in a wide pan for 3-4 minutes on medium heat. Add the zucchini and garlic and cook for another five minutes or so. Stir in whatever spices and/or herbs fit your mood. Cook until most of the moisture is gone.

    Add the zucchini/onion mix to a bowl with the crumbled tofu, walnuts and breadcrumbs. Stir well, and refrigerate for an hour.

    Form small (~1 inch) balls from the mix on a baking-sheet and bake for about 30-35 minutes, turning once.

    The less angry marmot and I eat these often, varying the spices (Indian, Italian, Middle Eastern, it's all good.) Great in curries, on salads, halved on top of pizza or in a (no)meatball sub.
