    Well, okay, I could, but you'd need to send ME a quart of your tomato sauce! We SOOOO need to get together for the canning thing!

      In the past the tomatoes have involved buying 90 lbs of tomatoes in one go, then dropping absolutely everything I'm doing for the next 2 days to get them canned. My own plants didn't produce enough, and if you're gonna do it economically, you can't buy perfect quality heirlooms for $4/lb only to smush them and boil them down. So you wait til they are all mushy and the farmers are looking to get rid of them for $1/lb. Then you buy. But then you have to do the canning before they rot. Total pain in the ass that pays off all year long. And it cost like $100, which is a lot of money in my world.

      This time, I'm doing one of the two steps as I go - peeling and boiling down. I do 3-5 lbs of tomatoes at a time, as they come ripe and I pick them. I've got 22.7 lbs in the freezer, 11 more lbs on the counter, and more in the garden every day. The recipe calls for 45 lbs of tomatoes, so when I've got that much peeled and boiled down, I'm gonna defrost them, make the sauce recipe, and can it. And I should have enough to share if all goes well. Plus this time the cost was $0.

      BTW, my mom got me this supersweet canner for Christmas this past year. She's really funny that she won't help me when I'm struggling to pay the rent, but she'll buy me fancy toys from Williams Sonoma til the cows come home. But the canner is GREAT. Glad to bring it over so you can use it.
