Stalking is unwanted or obsessive attention by an individual or group toward another person. Stalking behaviors are related to harassment and intimidation and may include following the victim in person or monitoring them.
does this not describe what Zimmerman did? People follow people all the time. They don't do what Zimmerman clearly did, stalk. Yes, the justice (sic) system might not define it that way to suit their own needs but it is still stalking.

one must take a position that is neither safe, nor politic, nor popular, but he must do it because Conscience tells him it is right. MLK

Want to see where I go, you might follow me. On foot. I probably wouldn't even notice.

If its an empty, residential area, and you follow me in your car, slowly and obviously following ME, not just going the same way and passing me, and you stop and get out of the car and approach me, and you're not visibly a cop, and I don't know you - I'm not waiting for you to abduct me. I'm going to try to knock you down, ESPECIALLY if I'm a kid who thinks they're immortal (as all kids do).

I'd define that as threatening behavior, and stalking.
