    Wash thoroughly, spin dry in a salad spinner, press between paper towels.

    Chop or snip into tiny pieces.
    Distribute into an ice cube tray, making each cup about half full.
    Pour best quality olive oil over the chopped herbs.
    Freeze overnight.
    Transfer to a ziplock bag, date and label.

    Each cube will be about a Tbspn of oil infused with fresh herbs. The amount about the same as 1 tsp of dried herbs.
    But the flavor will be full of freshness even in January, or even a year later because the volatile oils are trapped in the oil.

    PS This trick is fine on store bought herbs too.
