But I have great news. I planted nasturtiums because I hoped they'd catch aphids -- and they did! That's the good news.

Now that I've caught them, what will I do with them? Should I just clip the infested parts of the nasturtiums and be done with it?

I hope all is well. Sorry I'm late to the party.

okay - so did you plant nasturtiums as a decoy?  to keep aphids from other plants?

Aphids I take care of by:

smushing them to the next world
using a hard spray and knocking them off
insecticidal soap works well (since they are soft-bodied insects)

If you DO clip and toss, you don't wanna just clip off tops and toss the aphids into a bin... you want to make sure you kill them.  If any are in the flying stage, they'll just take off and go to another plant.
