    I use "Better than Bouillon" stock, mushroom flavor, for anything that would normally take beef or a rich stock. They have a nice vegetable broth base as well. It comes in a tub. All of our local stores carry it for about $6.

    You can also just make a rich mushroom stock. If you have access to cheap criminis or portabellos (they carry them for a few bucks at Trader Joe's), they make a very nice stock. If it's too flat, add celery. You can freeze it. It's a very fine stock base for richer soups that don't do well with just a vegetable base.
