  •  Recipe for home made tofu 'chicken chunks' (4+ / 0-)

    Buy a tub of non-gmo tofu -- I like the 'firm' type best.

    Put it in the freezer part of your refrigerator.  After it freezes, defrost it, squeeze out most of the water, and you have a square sponge-like product that you can cut up into little square chunks for soup, or tear into shreds.  

    Sprinkle with your favorite flavorings -- I use low salt chicken boullion or mixed spices.  Use in salad, sandwiches, casseroles.

    Freezing and defrosting makes the texture somewhat rubbery, more like meat than cheese.  

    It picks up the flavor of whatever it is cooked with.

      For those saying "just eat vegetarian" ... I did a quick search on "Tofu imported to US".  Here is one interesting article:

      According to a recent report by the US Department of Agriculture Economic Research Service (USDA-ERS), acreage of organic soybeans has dropped in recent years after reaching a peak of 174,467 acres in 2001. Organic soybean acreage in 2005 was 122,217.

      Despite the decline, organic soybeans remain a leading organic crop in the United States, ranking third behind wheat and corn in total acreage in 2005.

      The USDA-ERS report also finds organic corn acreage increasing, growing from 99,111 acres in 2004 to 130,672 acres in 2005.

      Competition from China

      Perhaps the biggest reason US organic farmers are growing fewer organic soybeans is that major soymilk manufacturers, such as WhiteWave Foods, are importing organic soybeans from China.

      The article is from 2007.  I'd be surprised if any soybeans that are imported (from China or elsewhere) aren't GMO, too.  The only good news ... I think China has a supply deficit for soybeans for domestic consumption, so perhaps less is getting exported.

        I buy the Sprouts store brand of tofu, which says on it "made from non-GMO soy beans."  "and made without processing agents."  But there's no country of origin,nor where or who it is manufactured by
