      provided you can keep the temperature between 200 - 240 for about 4 hours.

      My Weber is more than up to the task. It has 3 vents on the bottom and one on the lid. It also has a thermometer in the lid and that make it easy to maintain the proper cooking temperature the entire time.

      I had a Brinkman smoker of the same style, but I'm not sure that it would have been up to the task as compared to the Weber. The Weber really shines for this kind of thing.

      The only thing I can't do in the Weber that I would like to do is to cold smoke. That would probably require a fairly expensive electric unit to pull off. But for everything else the Weber Bullet does a great job.

      The only trouble with retirement is...I never get a day off!
