I've heard aks with tolerable frequency over the years, almost invariably from African Americans. And in fact there was one A.A. comedian I heard on TV more than twenty years ago who made a hilarious Lizzie Borden joke. It went something like:

"Mammy, can I go to the dance tonight."

"I don't know, go axe your parents."

And I hear it as a standard metathesis, much as my younger brother (and many other children of the time) in his early years used to say pisghetti for the commonly consumed pasta.

But there is no metathesis in the transformation from espresso to expresso. Rather, I think, it's a modification by analogy to the common English word express.
