  •  I did this one last week. It gives me another use (7+ / 0-)

    for old bananas, and one serving is approximately the same as if I made oatmeal the way I usually do. So I cut the recipe in half, and ate all 8 cookies. Yum! Next time I'm going to bake them longer, hoping for a bit of crispy.

    Ingredients:

        • 2 medium ripe bananas, mashed
        • 1 cup of uncooked quick oats*
        • 1/4 cup chocolate chips

    Directions:

    Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a Silpat.

    Combine the mashed bananas and oats in a bowl. Fold in the chocolate chips and place a tablespoon of each on the cookie sheet.

    Bake 15 minutes. Makes 16 cookies.

    If you want, you can replace the chocolate chips for cocoa nibs, raisins, craisins, whatever!

    Also, on her site there's a search. Put anything you can think of in it, and it will come up with something wonderful. If you're adventurous, you could spend many hours reading recipes. I know I have.
