    and I have found the challenge MUCH easier with a rice cooker.  I have been able to eat much healthier since its purchase.  It is easy to cook whole grains as well as whole and split legumes without fuss.  Measure the amount, wash, soak overnight (or at least an hour), drain, add to cooker, add water to the correct level, press a button, and it stops when done.  Fancy models even have timers to start cooking when you want.

    I was eating too many refined foods 'cause I didn't have the time to cook.

    Also, this is a wonderful time of the year to get into cooking up a pot of nourishing soup like Senate White Bean listed above.  an excellent veggie bouillon I have found is "Better Than Bouillon" vegetable base.
