    and I don't think it's halfway through, but toward the end, you just turn it so it's breast-side up and the skin can brown.

    Doesn't take an iron chef. Any woman who cooks can do it.

    Then again, I never truss the drumsticks. Never saw a reason for it...but I don't much like turkey so I don't roast it. Best turkey I ever had, some friends of mine smoked in a Japanese smoker-cooker on their deck.

    Wow. THOSE birds were excellent (and they did it for parties, not just holidays). Never asked Rick whether he smoked the birds breast-side-up or breast-side-down. ;-D
