    Turn it on to High, then get a cookie sheet, line it with foil, and spread out vegetable chunks tossed in olive oil and sprinkled with sea salt.  Maybe add some garlic or rosemary.  Roast veggies until browned on edges and cooked through.  This makes for a divine dinner and good leftovers.  Try it with cauliflower, broccoli, butternut squash, zucchini, tomatoes, asparagus…virtually any vegetable can be roasted.

    Then buy some good whole wheat bread and make sandwiches with veggie spreads like artichoke bruschetta, ajvar (roasted red pepper spread), olive tapenades, etc.  Add lettuce (I buy the pre-washed) and some sliced avocado.  You have a wonderful veggie, vegan sandwich.  Add cheese if you eat dairy.

    A rice cooker might be helpful if you like rice.  

    I also buy soy products like soy "hot dogs" which I eat with hot dog relish.  Not bad.  Also I like frozen veggie burgers which I doll up like a regular hamburger.

    As I said, I'm lazy.
