  •  Chocolate Chip cookies!! (10+ / 0-)

    ! cup butter, softened
    1 cup white sugar
    1 cup packed brown sugar
    2 eggs
    2 tsp vanilla extract
    3 cups all purpose flour
    1 tsp baking soda
    3 tsp hot water
    1/2 tsp salt
    2 cups semisweet chocolate chips
    1 cup chopped walnuts (optional)

    Preheat oven to 350
    Cream together butter, white sugar,  and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve the baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips and nuts.
    Drop by large spoonfuls onto ungreased pans.
    Bake for about 10 minutes or until edges are nicely browned.

    Another option I use for these is adding peanut butter chips instead of chocolate (for Draco who can't have chocolate). Or I add a mix of chocolate and peanut butter.

    I have a good recipe for cut out cookies too, but those use shortening not butter.  Bit and I are making cookies next Friday. We're adding some thumb print cookies to the mix as well. We bought special jelly for them (apricot pineapple) and we're going to use some of the red plum jelly I have.  If we have a chance maybe we'll go up to the farmer's market on Saturday morning and get some really special jelly.

        of cookies this year. Including the peanut butter chip ones.

        Oh, and just got back from the health clinic... I have an appointment for January 2 at 1:30 PM! I also have the paperwork to fill out. It will be silding scale because I have such a huge medicaid buy in. Co-payments start at $20, which is what I was paying in Orlando. I'll take $20 and if it's more than that I'll take it up there after my other half gets his check on the 3rd.

            most of the time in the clinic in ORlando. I don't know about this one. It has to be better than what I've been squeaking by with. She did say to bring ALL meds, and when I mentioned the symbicort, she said to definitely bring that. So maybe they have a low cost program to get that, which would be great.
            What I was using since I lost my medicaid was ER care, which as you know, doesn't work well for managing chronic conditions. Who knows, maybe I'll even be able to get my ortho and seizure issues identified and treated. But even if not, having the COPD managed again, instead of coping (as the commercials say), would be a HUGE improvement.
