    While staying in hotels for business I often cooked it on the gas grills the hotels had by their pools. Carried my own pan, oil, spoons, chopping board, etc. with me, and cooked outdoors in the evenings. Cooking on the gas grill worked just fine. Had some odd looks from the families using the pool, but who cares - I ate well and had fun doing it.
    Have cooked great ones over campfires while in the woods. Only trick is to make sure the pan is balanced so won't tip when the logs burn down.
    Won't cook paella on an electric burner indoors - doesn't cook as well - don't see the point; needs a flame lapping around the pan to be at all worthwhile in inversion-cooking rice... The electric ring has hotspots, too, which screw up the socarrat; so really, then, it's just chicken and rice - yawn.
    I suppose I'm a paella snob... There are worse things to be.
