    I really should get down to somewhere like Whole Foods and get some different kinds of lentils, and use a mixture next time as you suggest. In this immediate area, there's only the one kind. It's not as much of a backwater as when I was growing up here, but it still leaves something to be desired. (A different kind of lentils, for instance.)

      I just have three or four kinds on hand. They give me a bigger sense of variety -- we eat lentils pretty often here. A mixture is a great idea, though. I usually have green lentils, French lentils, or red lentils.

      I mix the red lentils with yellow pulses a lot. It gives them a thicker texture. Whole Foods carries black lentils pretty often. They make great dal, but I haven't mixed them with anything. I'll bet they'd be great with split chick peas. It might look strange.
