  •  A favorite soup: blender gazpacho (7+ / 0-)

    About two cups of fresh tomatoes would take about tablespoon of vinegar, a teaspoon of sugar, 1/4 cup olive oil, and a clove or two of peeled fresh garlic.  A few spoonfuls of chopped onion or green onion.  A cup of unsweetened yogurt (add this at the end if heating the soup).  

    It's a salty, garlicky, savoriy smoothie, and I find it addictive.  Add basil, maybe a few capers or anchovies, and it's like a caprese salad.  Add cucumber and celery and avocado and it's more like a traditional gazpacho.

      but when the kitchen is over-flowing with vine-ripened home-grown tomatos, it's a godsend!

      Would it work with sauce tomatoes like romas?

        but you do have to blend them a little longer due to their thicker skins.  And depending on your blender, tiny flecks of unblended skin may remain, especially with firmer tomatoes, but that's not a problem.  

        I forgot to say, add  black pepper, and salt  generously to taste.

        Always seemed odd to me that it calls for both vinegar and sugar, when you might think that tart yogurt and sweet ripe fruit would have it covered, but trial and error showed that both are needed.
