    Ninkasi was and is the goddess of brewing. Though fermentation was sacred/revered/practiced in nearly every culture we know of. Almost everybody has a fermented beverage in their culture. May not be what we call beer and wine, but what the hell. Drink what the locals drink.

    As others have noted and Pasteur finally figured out, it's the boiling that sanitizes the beer. Though higher alcohol and hop levels helped preserve beer exported on long voyages in slow boats. India Pale Ale, for example. Wooden barrels, warm climate, long trip.......

    FYI, hops are a recent phenomenon in beer, 1400s or so. Before that people used whatever local herb, spices, fruits, and flavorings were at hand. Now known as Gruit, craft and home brewers are exploring this beer style; with interesting results.

    I gotta go. Serving Mass tonight, need to bring some homebrew up from the cellar.
