    actually, I'm doing an overnight sponge with my sourdough starter, and adding the rest of the ingredients on the "2d" day, to complete the dough... thought I'd better mention that part too...

    If you're using modern yeast, and wanting to do long, soppy rises, you probably could still use my timing, but you'd need to cut WAAAAAYYYYYY down on the amount of yeast! The modern quick yeasts go fast, they will work with a long-soggy rise, but the quantity you start with has to be TINY (like if the recipe says one packet or one teaspoon, try a quarter-teaspoon) (I just got a big refresher while hunting for the video I didn't find, 8-))

    "real" work : a job where you wash your hands BEFORE you use the bathroom...
