    I'm learning stuff about kosher cooking that I never even thought about -- like the baking powder issue and other stuff.

    Thank you so much for the recipes!!!  They look great.  Ok, I admit I had to look up schmaltz -- for those like me -- rendered chicken or goose fat. You'd think I'd know that after having had a law partner, years ago, who was a Yiddish genius.  

    Enjoy the holiday, sidnora!  I have 3 diaries during the period of celebration and have at least an amazing sweet recipe -- will look for others but have to deal with Easter ham Day!!

      The baking powder thing is totally new to me. But it's a very Jewish thing to set up a really restrictive rule, and then spend an enormous amount of effort and thought figuring out a way around it. For example, see the definition of an eruv. The guy who owns the place where i rent my workspace is super-duper orthodox( won't eat strawberries), so i am going to ask him about it.

      Sorry i was sketchy about the schmaltz. Not good enough just to say "chicken fat", it is poultry fat rendered with onions, aka "liquid gold". I make it once a year (today, as it happens!), and it makes the best matzo balls.
